Happy Sunday! This week meal prep is full of rice, veggies, and beans. Even though there is no meat in any of the dishes the recipes are tasty, delicious, and most of all healthy! Remember when you eat better you feel better. Hope you enjoy!
Breakfast: Tofu Scramble-Tofu with spinach and mushrooms topped with mango salsa (I used turmeric, nutritional yeast, & black pepper to season the Tofu)
Lunch: Spicy Buddha Bowl- Brown rice, zucchini, sweet potatoes, red cabbage, chickpeas, and spicy tahini dressing
Dinner: Coconut Lentil Soup- Jasmine Rice, carrots, shredded cabbage, lentils, onions, coconut milk, water, & unsweetened coconut flakes)
Snacks: Greek Yogurt w/ apricot preserves, trail mix, pita chips w/hummus
